Broccoli Salad for Lunch

In my last recipe post, Healthy Philly Cheesesteaks, I had leftover turkey, onions, and quinoa so I repurposed them with some broccoli, feta cheese, and topped it with a balsamic dressing. Easy peasy and so delicious!!



Here’s what you need:

  • 1/2 C Quinoa
  • 1/2 Package of Ground Turkey
  • 1 Package of steamed broccoli florets
  • 1 Package of feta cheese, I like to use Atheno’s Reduced Fat Feta Cheese
  • 3 Tbsp of Lite Balsamic Dressing, I like Newman’s Own

Here’s what you do:

  1. Steam the broccoli
  2. Cook the quinoa, turkey, and caramelize the onions (see previous post)
  3. In a  large bowl, add the steamed broccoli, feta, and turkey mixture
  4. Top with dressing
  5. ENJOY!!!
